The class begins with an introduction to the foundational principles of sourdough, including the science of wild fermentation, the role of natural levains, and the importance of using premium, organic flours and grains. Under the guidance of experienced chef John Bender, participants learn to cultivate their own sourdough starter, understanding the subtle balance of hydration, temperature, and feeding that fosters a healthy, active culture. The class progresses to the hands-on process of mixing, kneading, and folding the dough, with a focus on developing gluten structure and achieving the perfect texture. Students also learn the crucial steps of bulk fermentation and shaping, gaining insight into timing, dough handling, and creating the perfect rise.
