First Course—Asparagus- braised pork belly, hollandaise, quinoa and spent grain crumb
Second Course—Rabbit Terrine- walnut, carrot mustard, spinach/ramp, horseradish, rye
Third Course—Quenelles de Brochet- Pike, crawfish, trinity vegetables, preserve lemon
Fourth Course—Steak Au Poivré- Striploin steak, Cognac, au gratin potato
Fifth Course—Spiced Honey Madeleine, Valrhona chocolate, vanilla
